1. Foie gras torchon paired with Sauternes. Henri's makes its foie gras with salt, white pepper and a bit of Christmas spice. The rich flavor of the liver pairs perfect with the honey suckle and bit of spice that this wine has. It is a classic pairing that everyone needs to try once in their lives.
2. Jasper Hill Harbison paired with Vincent Giradin Volnay. Soft ripened bloomy rind cows milk cheese wrapped in white spruce bark. Woodsy, mushroomy, mustardy. Pairs with the red burgundy that is from Volnay. Classic earthy dark fruit Pinot Noir.
3. Capriole O'banon and Brundlemayer. Fresh goats milk cheese wrapped in grape leaves that are soaked in Woodford Reserve. Gives the light lemony cheese a little more depth and wintry prowess. Pairs with the complex Austrian sparkling rose which is a blend of 33% Grüner Veltliner, 25% Riesling, 15% Pinot Noir, 10% Chardonnay, 17% other varieties.
