Thursday's Meal: Vegetable Quinoa Stir-Fry

Jennifer Vitera from Whole Foods shares a healthy gluten-free recipe.

The recipe for vegetable quinoa stir-fry is as follows:

Ingredients

1 onion, diced

3 cloves garlic, chopped

1 yellow squash, sliced

7 asparagus sliced

1 eggplant peeled, sliced into bite size pieces

1 bell pepper- red, yellow, orange or green, cored, sliced

2 cups Baby Bella mushrooms, trimmed, sliced

Sea salt and ground pepper

Herbs, to taste- parsley, oregano thyme, red pepper flakes

1 tablespoon balsamic vinegar

Method

Sautee onion until translucent

Add the garlic and the remaining vegetables

Season with sea salt, pepper, and herbs

Add the balsamic vinegar

Sautee until tender

Stir the cooked quinoa in with your sautéed veggies

Salt and pepper to taste.
