Loren Ellison from Whole Foods shares a recipe that's a different take on tuna salad and is also more flavorful. Kids and adults can enjoy it on crackers, multigrain sandwich bread or right on top of lettuce.
The recipe for honey mustard salmon salad is as follows:
2 tablespoons organic honey mustard
2 tablespoons plain nonfat yogurt
1 (6-ounce) can wild Alaskan pink salmon, drained
1 red bell pepper, chopped
1 rib celery, thinly slices
1/4 cup finely chopped red onion
2-4 slices of whole grain bread
-In a large bowl, whisk together honey mustard and yogurt.
-Add salmon, pepper, celery and red onion and stir gently until combined.
-Toast bread, and top with salmon salad for open face sandwiches (alternatively, top on mixed greens)
