Andi Jo Elbel from Arbor Trails Whole Foods shares a colorful recipe that uses a variety of vegetables.
The recipe for Rainbow Fajitas, that makes four to six servings, is as follows:
2 large Portobello mushrooms, sliced into "fajita strips"
1 head butter leaf lettuce or romaine
2 zucchini-cut ends off and slice in thin strips lengthwise
2 squash-cut ends off and slice in thin strips lengthwise
Pico de gallo
1/3 cup pecans
Marinade for veggies (1 1/2 cups water, 1/5 cup tamari, lime juice, 1 tsp cumin)
-Prep all veggies and marinade.
-Grill mushrooms zucchini & squash and on skillet for 2-3 minutes each side.
-Submerge in marinade and set aside.
-Pick a leaf and build your wrap. Start with the Portobello mushroom strips, followed by zucchini and squash, and then add pico de gallo or your favorite salsa.
-Add cilantro and pecans as a garnish.
-Fresh lime juice is a bonus if you have it!
