Emily Madden from H-E-B Cooking Connection shares a recipe that has all the flavors of the usual coconut shrimp but is a bit healthier.
The recipe for coconut shrimp stir fry is as follows:
2 Tbsp Ottavio Grapeseed Oil
1 lb Shrimp, peeled & deveined
2 Tbsp Adams Reserve Southwest Rub
½ jar Roberts Reserve Pineapple Coconut Mango Tequila Sauce
¼ Shredded Coconut
-In a large skillet over medium heat and add the Grapeseed Oil and sauté the shrimp and season with the Adams Rub, continue cooking until they are cooked & opaque.
-Add the coconut and Roberts Reserve Pineapple Coconut Sauce.
-Mix well, tossing to coat, Serve over rice & Enjoy.
