The recipe for Butter Lettuce Wraps with Thai Almond Sauce is as follows:
1/2 cup pollinator friendly almond butter
2 tablespoons rice vinegar
1 tablespoon reduced-sodium tamari
1 tablespoon peeled and chopped fresh ginger
3 pitted dates, chopped
2 cloves garlic, chopped
Pre-grilled Portobello mushroom, grilled chicken, or grilled fajita meat (a great recipe for the day after a back yard BBQ, use whatever you have)
Sliced Red bell pepper
-Combine almond butter, vinegar, tamari, ginger, dates, garlic and 1/3 cup water in a blender.
-Purée the mixture, adding more water a tablespoon at a time if necessary for it to blend smoothly.
-Assemble wrap and top with sauce! Optional to top wraps with: peanuts, lime wedge, cilantro or diced serrano peppers.
