Chef Roman Murphy from Bess Bistro showcases a burger with roasted Shishito peppers, white cheddar and kimchi BBQ sauce on a brioche bun.
The recipe for the BBQ sauce and the roasted Shishito peppers is as follows:
Kimchi BBQ Sauce
-2 cups ketchup
-1 cup water
-½ cup apple cider vinegar
-10 tablespoons brown sugar
-½ tbs ground black pepper
-½ tbs onion powder
-½ tbs garlic powder
-½ tbs mustard powder
-1 tbs lemon juice
-1 tbs Worcestershire sauce
-1 cup Kimchi (your favorite brand)
-In a medium saucepan, combine all ingredients.
-Bring mixture to a boil, reduce heat to a simmer.
-Cook uncovered, stirring frequently for 1 hour.
-Place mixture in a blender and puree until desired consistency.
-Return to heat and continue to simmer if mixture is not desired thickness.
-2 cups Shishito peppers
-½ tsp salt
-½ tsp black pepper
-1 tbs canola oil
-Toss all ingredients together and roast in a 350° oven for 5 minutes. Place on top of burger to finish.
