H-E-B Cooking Connection's Emily Madden has a perfect summer recipe using a special seasoning that she helped create.
The recipe is as follows:
1 cup Jasmine rice
1 cup coconut water
1/2 cup water
3-4 Tbsp Coconut milk
2-3 Tbsp basil, chopped
-Add rice and waters into a pot and bring to a boil. Once boiling occurs, reduce heat to medium, cover and simmer for 13 minutes. Keep an eye on the rice, once the water is gone it should be done. This could take a little longer or a less time.
-When done add coconut milk and basil to the rice and fluff with fork, mixing the milk and basil into the rice well.
1 LB jumbo shrimp, peeled & deveined
4-5 Tbsp Coconut oil
4-5 Tbsp Adams Reserve Thai Thai Rub
Fresh lime juice or lime wedges
4-5 Tbsp cilantro, chopped
-Season shrimp with Thai Thai Rub
-Heat coconut oil over med high heat.
-When oil is hot toss in shrimp and cook for about 4-5 minutes. Shrimp with curl up and outside should be slightly crispy.
-Place a spoon full of rice on plate and top with a few shrimp. Top off with cilantro and fresh lime juice.
