Executive Chef Nathan Lemley makes a classic dish and talks about what makes Parkside's unique.
The recipe for Parkside's cheeseburger is as follows:
-2 lb Chuck
-1/2 lb Brisket
-1 Red onion
-1 Head bib lettuce
-6 Burger buns
-6 Slices white cheddar
-Preheat oven to 350 degrees.
-Cut chuck and brisket into 1" cubes for grinding and place on a tray in a single layer.
-Place the tray of meat in the freezer until very cold but not frozen.
-Grind the meat using a medium size die.
-Portion the burgers into 6.4oz patties.
-Cut nice slices of tomatoes.
-Slice the red onions into rings.
-Pull apart and clean bib lettuce.
-Sear burgers for 3 min on the first side in a hot cast iron or heavy bottomed skillet. Then flip them and place the pan in the oven.
-Cook for another 3 minutes for medium rare.
-Cover with slices of cheese and put back in the oven until the cheese is melted.
-Assemble the burgers on the buns with the lettuce, tomato, and onion.
