Monday's Meal: General Tso's Quail

Cafe Josie's Chef Todd Havers shares a recipe using quail.

The recipe is for two people and is as follows:

General Tso's Quail


2 semi-boneless quail

1 teaspoon peanut oil


1/2 cup brown sugar

1/2 cup rice wine vinegar

3 cloves garlic, thinly sliced

1/2 piece ginger, peeled and minced

1 thai chili, thinly sliced

1 tablespoon soy sauce

1 small head broccoli

1 red bell pepper

1 bunch baby carrots

1/4 cup peanuts

1 teaspoon peanut oil

salt & pepper


1. Make the Sauce:

Combine all ingredients in a sauce pot, bring to a boil, then reduce to simmer by half, approximately 20 minutes. Remove from heat and allow to cool to room temperature.

2. Cook the Vegetables:

Cut broccoli into florets, red bell pepper into strips, peel baby carrots. Season vegetables with salt and pepper, then roast the vegetables in a 350 degree oven for approximately 30 minutes.

3. Cook the Peanuts:

Toss the peanuts in the oil and season with salt. Roast peanuts in a 350 degree for approximately 20 minutes.

4. Cook the Quail:

Warm a saute pan over medium high heat. Season Quail with salt and pepper. Add 1 teaspoon peanut oil to saute pan and then add the quail. Sear on one side for approximately 5 minutes. Turn quail over and transfer pan to 350 degree oven. Roast for approximately 10 minutes.

5. Plate the vegetables, followed by the quail. Top with the peanuts and the sauce.
