Don't worry if you can't grill outdoors. Rachel Dunlap with Whole Foods shares a vegetarian recipe that's got a little kick and you can grill it indoors.
The recipe for Grilled Ancho Lime Cauliflower Steaks that serves four to six is as follows:
-2 heads of cauliflower
-2 limes, zested with juice reserved
-¼ cup olive oil
-3 cloves minced garlic
-1 tbl Honey
-3 tbl Ancho Chile Powder
-2 tsp salt
-½ bunch of chopped cilantro
-Remove the leaves on the cauliflower and cut the stem down to just below where the florets start and the head of cauliflower sits flat. Cut off florets on opposite sides of cauliflower head, then cut into 3-4 1.5" steaks. Use trimmed florets for crudité platter or other recipes.
-Zest lime, mince garlic and mix with Ancho powder and salt. In a small bowl, whisk lime, oil and honey until incorporated. Chop cilantro and set aside.
-Heat grill to high heat, or heat oven to 450 degrees F. Coat steaks with oil and honey mixture until well coated. Pat seasoning mix onto steaks until all sides are covered.
-Place on heated grill and cook for 5 minutes on each side. Can increase cooking time to 7-8 minutes if softer texture and darker color is preferred. For oven, place on a lined sheet pan and bake for 7-8 minutes, flip and cook for an additional 7-8 minutes.
-Remove from cooking surface and sprinkle with chopped cilantro and serve immediately.
