Emily's recipe for al pastor tacos is as follows:
2 lb pork shoulder
1 cup water
2 jars Red Rio Al Pastor Cooking Sauces
pineapple, medium dice
white onion, small dice
* Place pork in a crockpot with 1 & 1/2 jars of the Red Rio sauce and water. Cook on low 6-8 hours or high 4-6 hours.
* When meat is done, remove from crockpot and shred.
* In the meantime sauté the pineapple in the remaining sauce. When done, add in the pork.
* Place meat on a tortilla and top with onion, cilantro, and lime.
