Tuesday's Meal: Katy's Peri Peri Salad

Emily Madden with H-E-B shares the perfect summer recipe.

Ingredients

1 lb shrimp, peeled & deveined
Food Truck Fusion Katy's Peri Peri Sauce
Central Market Herb Garden Spring Mix
Jicama, small dice
Red onion, sliced thin
Yellow rasins
Fiesta taco pumpkin seeds
Cotija cheese

Method

* Marinate shrimp in the Katy's Peri Peri Sauce for about 30 minutes.
* In a large bowl mix greens, jicama, onion, raisins, and cheese.  Pour a few tablespoons of the Katy's Peri Peri sauce in the bowl and toss well until everything is evenly coated.
*  Cook shrimp in skillet over med-high heat for about 5 minutes.
* Place salad on plate, top with shrimp and pumpkin seeds.
