Michael Wake, with the Whole Foods Market Food Truck, shows us how to make Cheese & Chicken Papusas.
Cheese & Chicken Papusas
1 Rotisserie chicken
Cilantro – 4 T chopped
Assorted pickled and sliced vegetables, suggested vegetables:
- Beet – 1/2 ea – Julienned
- Red Onion – ½ ea – Thin Sliced
- Cucumber – ¼ ea – Thin sliced
- Radish – 2 ea – Thin sliced
- Carrots – 1 ea Julienned
-Maseca – 2 cups
-Water – 1 ½ cups
-Salt – ¼ tsp
Measure out the Maseca into a small bowl. Add the Salt and mix well. Slowly add the water and mix into a dough. Work with your hands for about 10 minutes and allow to rest covered in a damp towel for 20 minutes. Roll out the papusas into eight flat disks and mold into a small bowl. Place a little bit of the cheese into the bowl and fold over until there is no longer an opening. Chill after stuffing the papusas until you are ready to cook.
Heat a small pan with a little bit of canola oil. Place the Papusas on the pan and brown the outside of the papusas, flip until they are cooked through. Pull chicken apart once it has chilled and use for garnish over the Papusas. Top with pickled vegetables and garnish with cilantro.
