Emily Madden from H-E-B Cooking Connection kicks chicken salad up a notch with a special ingredient to her recipe.
The recipe is as follows:
1 rotisserie chicken, deboned and chopped
1/2 jar Roberts Reserve Jalapeno Dip
1/3-1/2 cup mayonnaise
1/4 cup cilantro, chopped
3 stalks green onion, chopped
2 stalks celery, small dice
1 jalapeno, seeds and ribs removed & small dice
1/2 Tbsp House Rub
* In a small bowl combine the mayo and jalapeno dip and mix well.
* Combine all the other ingredients in a large bowl.
* Gentle stir the dressing over into the chicken mixture and serve chilled.
