Tuesday's Meal: Chicken Wonton Chalupas

It's a collision of two cuisines as Emily Madden from H-E-B Cooking Connection shares a Chinese and Mexican inspired recipe.

The recipe is as follows:

Ingredients

Wonton wrappers

1 lb ground chicken

1 1/2 Tbsp Adams Reserve Saigon Sunrise rub

Tsp sesame oil

2 Tbsp olive oil

2 cups shredded cabbage

1/4 cup shredded carrot

1/4 cup sliced green onion

3 Tbsp chopped cilantro

Sliced jalapeno (optional)

Lime wedges (optional)

2 Tbsp rice wine vinegar

2 Tbsp olive oil

4 Tbsp Vela Farms Orange Chili Marmalade

Method

* Season chicken with Adams rub and brown in a skillet with the olive and sesame oil.
* In the meantime fry or bake your wonton wrappers in the shape of taco shells.  If baking spray the bottom of a muffin tin with cooking spray and fold wrapper in half and place between the cups.  bake at 350 for about 5-7 minutes.  If frying, fry until golden brown; this will only take about a minute and a half.

* In a large bowl combine all the veggies except the limes.  In a smaller bowl combine the marmalade, oil, and vinegar.  Whisk well.  Toss the dressing with the slaw mixture.

* Place the chicken in the wonton shell and top with slaw, serve with lime wedges on the side.
