Emily Madden with H-E-B Cooking Connection shares a recipe.
The recipe is as follows:
1 lb shrimp
1/4 cup yellow onion, sliced thin
2 Tbsp Adams Reserve Peppercorn & Garlic Sear N Crust
1/2 jar Roberts Reserve Hatch Jalapeno Jam
2 Tbsp olive oil
Cilantro for garnish
-Heat skillet over med-high heat.
-Add in oil, when hot begin to cook onions.
-Once onions are almost done, add in shrimp that has been seasoned with the Adams rub. Cook for about 3-4 minutes.
-Once shrimp are almost don't, add in Hatch jam and stir until sauce has been warmed through.
-Serve over rice and garnish with cilantro. This could also be used in lettuce wraps, or by its self as an appetizer.
