Thursday's Meal: Holiday Oatmael Cooking Mix

Melissa Brown from Whole Foods shares a great gift idea you can give to someone or make and give them as an edible treat!

Ingredients

Yield: 2 dozen cookies

For the mix:

-1 cup all-purpose flour

-1/2 teaspoon ground cinnamon

-1/2 teaspoon baking powder

-1/4 teaspoon fine sea salt

- 3/4 cup dried cranberries

-3/4 cup brown sugar

-1 cup rolled oats*

-1 cup white chocolate chips

To prepare

-1 egg

-1/2 cup (1 stick) plus 2 tablespoons unsalted butter (10 tablespoons), melted

-1/4 teaspoon baking soda


*Tip: Be sure to use old-fashioned (not quick-cooking) oats in this recipe for best texture.

Method

For the mix:
Whisk together flour, baking powder, cinnamon, baking soda and salt in a medium bowl. Spoon into a 1-quart jar. Add the remaining mix ingredients in layers, pressing down lightly on each before adding the next. Seal jar. Package for gift-giving.

To prepare:
Preheat the oven to 350°F. Pour cookie mix into a large bowl and stir in egg and melted butter. Drop cookie dough onto ungreased baking sheets by rounded tablespoons, leaving 2 inches between each cookie. Bake until edges are just golden, 10 to 12 minutes. Cool cookies on the baking sheets for 5 minutes and then transfer to wire racks to cool completely.
