Mia Vargas from Whole Foods shares a quick and easy recipe.
The recipe for the grilled chicken and chickpea wrap, that makes eight wraps, is as follows:
2 cups slightly mashed chickpeas
1/2 cup diced English seedless cucumber
1/2 cup finely chopped cilantro
Juice of 1 lemon
1 tsp red pepper flakes(optional)
2 tsp chaat masala
2 tsp cumin powder
8 leaves of butter lettuce
8 small 6 inch wheat tortillas
-In a large bowl mix chickpeas, diced cucumber, ½ cup chopped cilantro, lemon juice, chaat masala, and cumin powder (optional red pepper flakes).
-Top a 6 inch tortilla w/ a leaf of butter lettuce.
-Scoop the chickpea mixture onto the lettuce.
-Fold the tortilla into a burrito.
-Grill the wrap for about one minute on each side.
