Cooking with FOX 7: Game day egg rolls

Emily Madden with H-E-B Cooking Connection makes some game day egg rolls.

The recipe for the two variations is as follows:

#1 Roast Beef & Provolone Egg Rolls
 
5 slices HEB in house roast beef, sliced on 2
5 sliced HEB provolone cheese
5 egg roll wrappers
Roberts Reserve Onion Blossom Horseradish Dip & Spread
oil for frying
 
* In a deep fryer or cast iron Dutch oven slowly heat oil to 350°-375°.
* In the meantime, place a slice of cheese on top of a slice of meat.  Roll up meat and cheese together.  Place rolled meat and cheese on an egg roll wrapper about an inch from the top leaving about half an inch on both sided.  If meat/cheese roll is too long, trim to fit.  Lightly wet the edges of the wrapper.  Roll the top over the meat once, then fold in the sides and finish by rolling the rest of the way.  Repeat with remaining ingredients.
* When oil has reach temperature, place a couple egg rolls in at a time.  Fry in small batches for 4-6 minutes or until golden brown.  Place on a paper towel lined plate to drain.
* Serve with Onion Blossom Horseradish dip.
 
#2 Bacon Mac & Cheese Egg Rolls
 
5 sliced cooked bacon
8-10 ounces mac and cheese
5 egg roll wrappers
HEB Queso Blanco
oil for frying
 
* In a deep fryer or cast iron Dutch oven slowly heat oil to 350°-375°.
* For this recipe to work you must start with fully chilled mac & cheese.  This will help it stay in place during cooking.
* Lay out 5  wrappers on a clean work surface.  Evenly disperse mac and cheese on wrappers about and inch from the top, leaving about half an inch on both sides.  Break up bacon to fit over the top of the mac and cheese.  Wet the edges of the egg roll.  Roll the top over once, then fold in the sides and finish by rolling the rest of the way. 
* When oil has reach temperature, place a couple egg rolls in at a time.  Fry in small batches for 4-6 minutes or until golden brown.  Place on a paper towel lined plate to drain.
* Heat the HEB Queso Blanco according to package directions and serve.
