Emily Madden with H-E-B Cooking Connection shares a recipe that's healthy and easy to make.
The recipe, which serves four, for sundried tomatoes over smashed avocado on multigrain truffle toast is as follows:
2 large ripe avocados
1-2 cloves garlic, grated
2-3 Tbsp lemon juice
1/3 cup sundried tomatoes, drained and roughly chopped
8 sliced multigrain bread
Sabatino Truffle Zest with Parsley
* Lightly drizzle or brush each side of bread with olive oil and sprinkle with salt and Truffle Zest. Toast in oven until golden brown, or desired toastyness.
* In the mean time, remove pit from avocados and dice. In a medium sized bowl smash together the avocado, garlic, lemon juice, and a pinch of salt. Smash to desired consistency.
* Place a couple spoonfuls of avocado on each piece of toast and spread evenly. Top with sundried tomatoes and finish off with a light sprinkle of the Truffle Zest.
