AUSTIN, Texas (FOX 7 Austin) - Thai Quinoa Salad
- 2 cups cooked quinoa, cooled
- 1 cup shredded cabbage
- 1/3 cup red onion, small dice
- 1 cup matchstick or shredded carrots
- 1/2 cup cilantro
- 1/4 cup sliced green onions
- 1/2 cup cashews
- 3/4 cup Pretty Thai Peanut Sauce, or to taste
Combine all ingredients in a large bowl and mix well. Taste for salt and adjust seasoning as needed. Chill for at least 1 hour before serving.
Dressing may settle during the chilling process, mix before serving.
