Monday's Meal: El Burro

Matty Gomes and Chef Carlos Almarez talk about the new restaurant in Lamar Union and make one of its specialties.

The recipe for El Burro Birria Tacos is as follows:

Birria Sauce

1365 grams roma tomatoes
1366 grams tomatillos
17 grams morita peppers
16 grams guajillo peppers
9 each cloves
3 each allspice
15 grams black pepprcorns
28 grams garlic
1.5 cups white distilled vinegar

Roast tomatoes and tomatillos over an open flame until toasty, make your chilies soft by toasting and deseed them. Once soft blend all ingredients together in a blender and pass through a fine chinois. Save pulp to rub the goat.

Goat Preperation
Braise goat until tender, shred and add to sauce, cook down to reach the desired flavor.
