Mary Olivar from Whole Foods shares a recipe inspired by a microcredit recipient from Whole Foods Foundation. It's a take on the Samona dish vaisalo and is a warm tapioca porridge that can be enjoyed for breakfast or dessert.
The recipe is as follows:
1/4 cup small-pearl tapioca
1 (13.5-ounce) can light coconut milk
1/3 cup sugar
1 1/2 teaspoons lemon juice
1/2 cup toasted unsweetened coconut flakes
Place tapioca and 2 cups water into a medium heavy-bottomed saucepan and let soak 30 minutes.
Add coconut milk and sugar; bring to a boil over medium heat, stirring constantly.
Reduce heat to a simmer and cook about 15 minutes, or until tapioca is translucent, stirring frequently to prevent scorching.
Stir in lemon juice and garnish with coconut flakes.
