Emily Madden with H-E-B shares a salmon recipe.
The recipe is as follows:
4 salmon filets
2-3 Tbsp Adams Reserve Citrus Sriracha Rub
1 blood orange, diced
1 mandarin orange, diced
1/4 red onion, finely diced
1/4 cup chopped cilantro
1/3-1/2 cup Roberts Reserve Hatch Jalapeno Jam
Salt to taste
Oil for cooking
* Combine blood orange, mandarin, red onion, cilantro, jam, and salt and mix until everything is incorporated. Chill for 30 minutes.
* Season salmon with Adams rub.
* Heat skillet over med-high heat. Add in oil. When oil is hot place in salmon and cook 3-4 minutes per side.
* Serve salmon over a bed of rice and top with the citrus relish.
