Tuesday's Meal: Texas Banh Mi

Emily Madden with H-E-B makes a classic Vietnamese sandwich with a Lone Star twist.

The recipe for Emily's Texas banh mi is as follows:


1/2 rice wine vinegar

1/4 cup water

1/4 cup white sugar

1 jalapeno, deseeded and sliced thin

1/2 cup cucumber, sliced thin

1/4 cup white onion, sliced thin

1/4 cup matchstick carrots

1/4 cup daikon radish, julienned

1/4 cup chopped cilantro

sriracha hummus

1/3 lb thin sliced chicken breast

1 baguette


* In sauce pan bring water, rice wine vinegar, and sugar to a boil.  Stir until sugar is dissolved.  Let cool.

* When marinade is cool, add in carrots, onion, and radish and let sit for at least 30 minutes.

* Slice baguette in half long ways.  On bottom half of bread spread hummus.  Then add chicken, pickled veggies, green beans, jalapeno, cucumber, and cilantro.

* Spread the top half of the bread with guacamole and place it on top of the sandwich.
