Cooking with FOX 7: Red Snapper Tacos w/ Spicy Strawberry Salsa

Whole Foods Culinary Coordinator Tara Treffry shows off the versatility of strawberries with a special recipe.

The recipe is as follows:

INGREDIENTS
1 ½ pounds red snapper fillets, skin removed
2 teaspoons canola oil
1 red bell pepper, thinly sliced
½ red onion, thinly sliced
2 teaspoons tequila lime seasoning
8 corn tortillas
1 pint Spicy Strawberry Salsa (in produce department at Whole Foods Market)
 
METHOD
In a bowl, combine red pepper, red onion and 1 teaspoon of tequila lime seasoning. Season the fish with the other 1 teaspoon of tequila lime seasoning, distributing it evenly on each fillet. In a sauté pan, heat 1 teaspoon canola oil on medium. Place the snapper in the pan and brown on both sides until its cooked through, approximately 4 to 5 minutes per side. Remove fish from pan and place on a plate to rest. In the same pan, heat the remaining oil and sauté the pepper and onion mix until the vegetables are slightly browned and tender. Heat a dry sauté pan on medium and warm each tortilla up prior to building the tacos. Assemble the tacos with vegetables, fish and spicy strawberry salsa.
