Good Day Cooks: Garlic crusted shrimp

Garlic Crusted Shrimp with Chimichurri

  • 1 lb large shrimp, peeled & deveined
  • 1 Tbsp Adams Reserve Roasted Garlic Rub
  • 2 Tbsp olive oil,or other cooking oil
  • 1/4 cup flat leaf parsley, stems removed & roughly chopped
  • 4 cloves garlic
  • 3 Tbsp red wine vinegar
  • 2 Tbsp dried oregano
  • 2 tsp crushed red pepper
  • salt and pepper to taste
  • 1/2 cup Ottavio Extra Virgin Olive Oil
  1. In a food processor or blender, add parsley, red wine vinegar, garlic. oregano, and pepper flakes.  Process until smooth.  Add salt and pepper to taste.  Pour into a bowl and stir in olive oil.  Allow to sit at room temperature for 20-30 minutes.
  2. Heat skillet over medium high heat.  Add in 2 Tbsp oil and allow to heat.  Season shrimp with Adams Rub.  Add shrimp to pan and cook for about 90 seconds per side
  3. Serve shrimp with chimichurri sauce.
