Tortilla strata recipe from FOX 7 Austin’s Tierra Neubaum

Ingredients

4 small tortillas 
5 eggs
1/2 cup chopped bacon 
1/2 cup milk or unsweetened nut milk
1/2 cup shredded cheese
1/2 cup leeks, thinly chopped 
1/2 cup kale, chopped
1/2 cup potatoes, diced 
1 can diced green chilies 
Top with herbs. Serve with sour cream and/or your favorite hot sauce.

Method

Spray the pan with non-stick spray
Lay down the tortillas 
Whisk eggs and milk
Combine all ingredients with egg mixture
Pour mixture over the tortilllas 
Bake at 350 degrees for 30-45 minutes or until the egg bake is cooked through
