Chicken Salad Lettuce Wrap recipe from FOX 7 Austin's Tierra Neubaum

AUSTIN, Texas - During this pandemic we’ve been helping you spice up your at home recipes and FOX 7 Austin's Tierra Nebuaum shows how you can put your leftovers to good use.

Tierra got her meal from Austin Rotisserie which makes traditional French rotisserie with a local Austin flair. Takeout, delivery and family meals are available and Austin Rotisserie is located at 702 Shady Lane. Currently, it's closed Sunday-Tuesday and open Wednesday-Friday from 4:30 p.m. to 9 p.m. and on Saturday from 2 p.m. to 9 p.m.

Ingredients

• 2 cups shredded chicken
• 1/2 cup mayo 
• 1 tablespoon Dijon mustard 
• 1/2 cup nuts 
• 1/2 cup cooked diced potatoes
• 1/4 cup sliced olives 
• 1/4 cup finely chopped red onion 
• 1-2 teaspoons dill 
• 1 head living or bibb lettuce
