Emily Madden with H-E-B Cooking Connection shares a recipe combining two favorites.
The recipe for her Frito pie meatloaf is as follows:
2 lb ground beef
3 cups shredded cheddar, divided
3 cups Cookwell & Company 2 Step Chili Mix, divided
1/2 cup yellow onion, small dice
1 Tbsp Adams Reserve Just Right Burger Spice
1/2 cup crushed corn chips
* In a large mixing bowl combine ground beef, onion, egg, crushed chips, seasoning, 1 1/2 cup cheese, and 1 1/2 cup chili mix. using your hands mix well.
* Place in a baking dish and form into a loaf.
* Bake in a preheated 375° oven for 1 hour. Remove from oven and top with remaining chili mix and cheese. Bake an addition 15 minutes. Internal temperature should reach 165°.
* Let rest 10 minutes before serving. Top with corn chips for an extra crunch.
