AUSTIN, Texas (FOX 7 Austin) - Emily Madden with H-E-B Cooking Connection shares a recipe.
The recipe is as follows:
1 lb ground pork
1/2 cup crushed tortilla chips
1/2 Tbsp Adams Reserve Al Pastor seasoning
1/2 cup yellow onion, fine dice
16 1/2 inch cubes Pepper Jack cheese
1/2 jar Mi Tierra Tomatillo Sauce
cilantro and guac for garnish
Preheat oven to 350°.
In a large bowl combine pork, egg, crushed tortillas, Al Pastor Rub, and onion; mix well.
Divide mixture into 16 even portions. Form each portion into a ball around each piece of cheese.
Place meatballs in a 9x13 baking dish and cover with Mi Tierra Tomatillo Sauce.
Bake for 35 minutes.
Let stand 5 minutes before serving.
Garnish with cilantro and guacamole
