Good Day Cooks: Double Bacon Meatloaf

The recipe is as follows:

Ingredients

2 lb ground beef
2 eggs, lightly beaten
1 cup bread crumbs
1 cup white onion, finely diced
2 Tbsp Adams Reserve Hickory House Rub
1 lb bacon, cooked & crumbled
1 jar Better Than Good Bacon Jam
2 cups shredded cheddar

Method

In a medium sized bowl combine shredded cheese and bacon jam.
Mix well and set aside.
In a large bowl combine ground beef, onion, eggs, Hickory House rub, bread crumbs, and cooked bacon. Using your hands, mix well.
Divide the mixture into two equal halves.
Place one half on the bottom of a greased 9x13 baking dish and form into a loaf shape about 1/2 inch thick.
Place cheese/bacon jam mixture in the middle, allowing an inch around the edges.
Place second half of the mixture on top and seal the edges, forming the meatloaf.
Bake in a 350° oven for 60 minutes, or until internal temperature reaches 165°.
Let rest for 5-10 minutes before serving.
