Cooking with FOX 7: Double Cheddar Guinness Mac & Cheese

Emily Madden with H-E-B Cooking Connection make a recipe with a little Irish twist in honor of St. Patrick's Day.

The recipe is as follows:

Ingredients

1 lb elbow macaroni, cooked
4 Tbsp butter, divided
2 Tbsp flour
2/3 cups Guinness
2 cups heavy cream
salt & pepper to taste
1 Tbsp Dijon mustard
1/2 tsp garlic powder
2 cups Kerrygold Dubliner Irish Cheddar
2 cups Tipperary Irish Cheddar
1 cup panko bread crumbs

Method
 
* In a sauce pan melt 2 Tbsp butter over medium heat.  Add in flour and whisk in for about a minute.  While whisking, add in beer, cream, and seasonings.  Bring to a simmer and cook for about 5-7 minutes, whisking frequently.  Add in cheese and stir/whisk until cheese is melted and sauce is smooth.
* Add in pasta and stir until everything is well incorporated.
* Melt the other 2 Tbsp butter and mix with panko.
* Pour the mac & cheese into a prepared 9x13 baking dish and top with buttered bread crumbs.
bake in a preheated 350° oven for 20 minutes.  Let cool at least 5 minutes before serving.
