Emily Madden with H-E-B Cooking Connection shares a healthy recipe.
The recipe is as follows:
2 salmon filets, skin removed
1 bag mixed greens
1 cup Fischer & Weiser German Fig Mustard, divided
1 Tbsp minced garlic
2 Tbsp shallots
1/3 cup white wine vinegar
2/3 cup olive oil
salt and pepper
* Lightly season salmon with salt and pepper. Coat each filet with mustard.
* Heat skillet over medium high heat, add in a little olive oil and let heat. Cook salmon for about 3-4 minutes per side or until internal temperature reaches 145°.
* In the mean time, combine 1/4 cup Fig mustard, olive oil, vinegar, shallots, garlic, and salt and pepper to taste. Whisk until everything is well incorporated.
* Toss greens with as much vinaigrette as desired and plate. Place salmon over greens and serve.
