Hilton Hotels launches off menu zero proof cocktails

Whether you're participating in "Dry January" or just looking to reduce your alcohol consumption and still go out, there are a lot of options and one of them is at Hilton Hotels and Resorts. It's launched some off menu cocktails at select locations, including in Austin, that are zero proof.

Mixologist Elliott Clark, @apartment_bartender on Instagram, curated the menu, which also includes some cocktails with alcohol, using items like the non-alchoholic spirit Seedlip as well as seasonal flavors like coffee and vanilla.

The cocktails on the menu are the Paloma Undercover, Urban Bourbon, Cafe Cognac and Tamed Tiki.

Clark made the Paloma Undercover for Good Day Austin weekend anchor Casey Claiborne. It's a winter variation on the classic Paloma cocktail with a bitter and sweet balance.

The recipe for the Paloma Undercover is as follows:

INGREDIENTS
2 oz Seedlip Spice 94 (also works with Seedlip Garden 108)  
1 oz Grapefruit Juice
1/2 oz Lime Juice
1/2 oz Brown Sugar Syrup 
2 parts brown sugar: 1 part water
1-2 oz Soda Water

METHOD
Combine all ingredients into a cocktail shaker and shake with ice.  
Strain the drink into coupe glass and garnish with a grapefruit twist.

Clark also made the Cafe Cognac and the Tamed Tiki as well.

The Tamed Tiki is also zero proof and contains coconut water, lime juice, orange juice, maple syrup and ginger beer. You can see how it's made here.
