Wednesday's Meal: Guatemalan Rellenitos

The recipe is as follows:

Ingredients

3 (yellow) ripe plantains
1 cinnamon stick
1 small can of refried black beans
8 oz./225 gr. of chocolate
(vegetable) oil
Water

Method

-Remove the plantains from their skins and cut them in slices of 1⁄2 inch/2 cm. Put them in a pan and cook them with the cinnamon stick and 2 cups of water until soft (5-10 minutes). When cooked, drain the remaining water.
-Mash the cooked plantains into a paste and let it cool off.

Rellenitos Filling

-Take a clean saucepan and cook the chocolate with 1⁄4 cup of water until melted.
-Next, add the small can of refried black beans. Mix the ingredients well until they form a thick paste.
-For the last part, heat sufficient oil in a large frying pan.
-Take a little bit of plantain paste and form a thick tortilla in your hand in the form of a little bowl.
-Stuff the bowl with a small amount of the chocolate/bean mixture.
Close the bowl so it forms an egg shaped ball with the chocolate/bean mixture closed inside.
-Use flour in case the balls are really sticky. Make sure all the holes are filled so the filling cannot drip out.
-Fry the plantains until they have a light golden brown color.
-You can serve them plain or with honey or sugar.
