Thai Quinoa Salad

  • 2 cups cooked quinoa, cooled
  • 1 cup shredded cabbage
  • 1/3 cup red onion, small dice​​​​​​​
  • 1 cup matchstick or shredded carrots
  • 1/2 cup cilantro
  • 1/4 cup sliced green onions
  • 1/2 cup cashews
  • 3/4 cup Pretty Thai Peanut Sauce, or to taste

Combine all ingredients in a large bowl and mix well. Taste for salt and adjust seasoning as needed. Chill for at least 1 hour before serving.  

Dressing may settle during the chilling process, mix before serving.
