Shane Barber and Chris Larsen with Freebirds share an easy recipe for corn salsa using all fresh ingredients.
The recipe is as follows:
-8 ears of corn, shucked and grilled.
-1/2 of a cup diced red bell pepper
-1/2 of a cup diced yellow onion
-1/4 cup chopped cilantro
-2 Tablespoons of diced jalapeños
-1 Teaspoon salt
-Pinch of cayenne pepper, more if you like it spicy
-Juice of one lime
Mix to incorporate all ingredients (be careful not to over mix because the color will dull)
Mix together and enjoy with chips.
