Good Day Cooks: Southwest Mashed Potato Casserole

 Emily Madden with H-E-B Cooking Connection shares a recipe for a side dish that's delicious and has a little kick to it.

The recipe is as follows:


2-2 1/2 lbs mashed potatoes
1/2 cup Fischer & Wieser Southwest Dip
2 Tbsp Adams Reserve House Rub
1 cup bacon, cooked & chopped
1/3 cup green onion, diced
1 cup shredded cheddar cheese


In a large bowl combine potatoes, House Rub, and Southwest Dip. Mix well.
Fold in bacon and green onion.
Pour into a greased 9x13 baking dish, use a spoon or spatula the spread even.
Top with cheese.
Bake in a preheated 350° for 15-20 minutes if potatoes are hot.
If potatoes are cold (i.e. made ahead of time) cover and bake for 40 minutes, remove cover and cook an additional 10 minutes or until cheese is melted.
